I installed the WRX MT pedal set this weekend using Peaty's directions:

As stated in the directions, it REALLY helps to have an extra set of hands. I utilized the wife to hold the throttle cable open to get the extra slack. This made the removal and reinstall of the gas pedal MUCH easier. She also held the pedal assembly when I hammered the pin back in.
One step that is different for the '03 Forester is that there is a black plastic clip at the top of the pedal assembly which you will have to pop out in order to get the assembly out. I removed it after I took out the 2 - 12mm bolts holding the assembly and removed the cable & white bushing. The throttle cable routes thru this clip and a big foamy cylinder before heading into the engine compartment.
The clip is black plastic with 4 prongs (two on the left, two on the right). I just used a flat head screwdriver to push the prongs in and my thumb to push back on the clip. Once I got that clip removed it was right in line with the directions.
The new pedals look great and add at least another 6-8hp. When combined with the STi key blank, total hp gain is 10-12!
My total install time was over an hour because I don't have a workbench or any other suitable surface for quality hammering! With the proper hammering surface, This could easily be done in < 30 min.
